Aunt Winnie started the tradition in our family of making Creamed Corn for Thanksgiving. While not a traditional dish, it goes well with all of the other Autumnal Flavors. Her recipe, utilizing frozen corn, is below. If you want to make it with fresh corn, Martha Stewart's recipe is looking pretty good!
Aunt Winnie's Creamed Corn
8 oz Cream Cheese
1 Cube Butter
Whipping Cream + Half & Half
3-4 bags Frozen Corn (Mix of organic and sweet white corn from Trader Joe's)
Salt & Pepper to taste
- Cook first three ingredients slowly in a heavy pot (like Le Creuset Enameled pot) until the cream cheese softens and ingredients blend.
- Add corn
- Cook slowly until corn is warmed through
- Add salt & pepper to taste
- Add a dash of freshly grated nutmeg
You can do this starting on the stove, and then popping into the oven; or even in a crock pot. It can be made a day or two before your event--just thin it out with cream if it has thickened too much. The best thing about this recipe is that you can't really ruin it! Enjoy!
